This one is homey! Cinnamon-banana caramel swirled throughout thick, strained yogurt, topped with a gluten-free crumble.
I roasted the banana slowly for 45 minutes until it was all caramelised and delicious, before simmering it down further with a mixture of honey, more cinnamon, a little bit of butter to balance the flavour, and of course some vanilla and salt to really bring those banana notes through.
The layering for this one was important, because I wanted you to experience the banana caramel in every bite, with a lovely crumble texture on top to mimic the experience of eating a slice of banana bread with a thick layer of cream cheese-like spread on top.
Keep refrigerated. Eat cold. Straight from the jar.
